Pancake Perfection
Whether it's flapjacks or pancakes, here are tips from the pancake masters at Kodiak Cakes:
  • Don't overbeat the batter.
  • Adjust the batter thickness according to how thick you like your pancakes. Thinner batter makes your pancakes lighter, thicker makes it heavier.
  • Use oil or cooking spray, not butter. Butter tends to burn on the pan and can leave bitter black specks on your pancake.
  • Don't flip the pancake back over after its been flipped the first time.

20,000 Leagues Under the Sea Salt
So you keep hearing about sea salt. What’s the dish? Sea salt is not mined like other salts. Instead, it results from the evaporation of sea water, a more costly process. For La Baleine Sea Salt, the salt is gathered from the salt-pan at Aigues-Mortes, a protected area of untamed land near the Mediterranean Sea. With its clean, salty flavor, you can use sea salt anywhere you'd regularly use salt, except for baking.
