Corned Beef with Spiced Apple Mustard Glaze
Ingredients
1 (3-to-4 lb.) corned beef
brisket or round
Water
1/2 cup apple jelly
1½ tbsp. mustard with beer
1/4 tsp. ground cloves
Directions

Prep time: 15 minutes, Cook time: about 3 hours Place corned beef and contents of seasoning packet in a large stockpot; add enough water to cover and bring to a boil. Reduce heat and simmer, covered, for 2½ hours. While meat cooks, melt apple jelly, mustard and cloves together in a small saucepan. Remove corned beef from water and place in a shallow baking dish lined with foil. Preheat oven to 350°F. Bake for 30 minutes, basting liberally with jelly mixture 2 or 3 times. Let cool slightly before thinly slicing against the grain; drizzle with any remaining glaze. Makes 6 servings.
