Pork with Cherry Bourbon Glaze
Prep: 5 minutes, Cook: about 25 minutes, Serves: 4
Melt 2 tbsp. butter in a large skillet over medium heat. Season 4 thick Raley’s Fresh pork loin chops with freshly ground sea salt and pepper and add to skillet. Cook for 20 minutes or until nicely browned and cooked through, turning occasionally. Stir in 1/2 cup cherry preserves, 1/4 cup bourbon and 2 tsp. balsamic vinegar. Cook for 5 minutes more. Top with chopped fresh thyme and toasted walnuts, if you like.
