"I wanted to choose a menu that was easy
to prepare but still looked expensive! I
finished off my meal with a quick salad made
of red leaf and red onions drizzled with olive
oil and raspberry vinegar and a Nob Hill
Trading Co. Baguette.


4 Cornish game hens, halved
2 large oranges, each cut into 12 divided wedges
1/2 cup each: honey and melted butter
2 tbsp. finely chopped fresh rosemary
Salt and freshly ground pepper to taste

Stuffing:
4 1/2 cups water
1 (16 oz.) package Hinode White & Wild Rice
4 tbsp. butter, divided
2 tbsp. Better Than Bouillon Chicken Base
1 (1.5-lb.) container Raley's Fresh Produce
Stuffing Mix
Directions
Prep time: 15 minutes, Cook time: 1 hour

Preheat oven to 375°F. Place game hens on a
large baking sheet and tuck 2 orange wedges
under each half. Stir together honey and butter
and brush mixture over the top; sprinkle with
rosemary and season with salt and pepper. Bake
for 1 hour or until game hens are cooked through.
Serve over stuffing. To prepare stuffing, bring
water, rice, 2 tbsp. butter and Better Than
Bouillon to a boil in a large saucepan. Cover and
simmer over low heat for 20 minutes; remove from
heat and let stand for 5 minutes. Meanwhile, melt
remaining butter in a large skillet . Stir in stuffing
mix; cook and spoon onto a platter and top with
game hens. Finish off with a squeeze of fresh
orange juice on each halved game hen from
remaining wedges.

Makes 8 servings.

Tip: Steam 1½ lbs. trimmed fresh green beans
and 1 sliced red bell pepper
until crisp-tender. Season with salt and pepper
and sprinkle with 1/2 cup
toasted sliced almonds.
