1 lb. shredded sharp Cheddar cheese,
at room temperature
1 cup microbrew beer, at room temperature
3 tbsp. butter, softened
1/2 tbsp. Nob Hill Trading Co. Dijon Mustard
1 tsp. Worcestershire sauce
1/8 tsp. cayenne pepper
1/3 cup sliced green onion (green part only)
Directions
Prep time: 10 minutes
Combine all ingredients except onions in a
food processor bowl; process until smooth.
Add onions; pulse on and off several times
until onions are chopped, but not pureed.
Transfer to a serving bowl and serve with
wheat or other hearty crackers.
Makes 3 cups.
May be prepared up to a week ahead and stored, covered, in the refrigerator. To serve, let stand at room temperature for 30 minutes or until soft enough to spread.
