Ingredients
1/2 lb. Nob Hill Trading Co. gobetti or
radiatore pasta
4 tbsp. butter, divided
3 tbsp. flour
1-1/2 cups milk
2 cups shredded sharp Cheddar cheese
1/2 cup shredded Havarti cheese
1/4 cup freshly grated Parmesan cheese
1/2 tbsp. prepared mustard
1/8 tsp. cayenne pepper
1/4 tsp. each: salt and pepper
1/2 cup fresh breadcrumbs
Directions
Prep time: 10 minutes

Cook time: 45 minutes

Preheat oven to 350°F. Lightly butter an 11-by-7-inch baking dish. Cook pasta in boiling water according to package directions until al dente. Drain and set aside. While pasta is cooking, melt

3 tbsp. butter in a large saucepan. Add flour; cook and stir for 2 minutes. Slowly whisk in milk; cook for a few minutes more or until smooth and slightly thickened. Whisk in cheeses and seasonings; cook over low heat until cheeses are melted. Stir in drained pasta and transfer to prepared dish. Melt remaining 1 tbsp. butter in a small saucepan and stir in breadcrumbs; sprinkle over top of pasta. Bake for 30 minutes or until lightly browned on top.
