To prepare stew, heat 1 tbsp. oil in a large pot.
Add beef in small batches and brown well on all
sides. Remove and set aside. Add remaining oil to
pot and add onions and carrots. Cook, stirring, for
about 5 minutes to lightly brown. Stir in flour and
cook for 2 minutes more. Add beer and broth; cook
and stir until slightly thickened. Add beef back to
pot with remaining stew ingredients and bring to a
boil. Cover and simmer over very low heat for 1½
hours. (Dumplings may be prepared at this point.)
Remove lid and simmer for 15 minutes more. To
prepare dumplings, combine flour, baking powder
and salt in a small bowl 15 minutes before stew is
done. Stir in remaining ingredients. Drop 8
spoonfuls on top of hot stew. Cover and cook for
about 15 minutes or until dumplings are cooked
through.
Makes 8 servings.
