1. Grill 2 sliced yellow onions for 10 minutes or until very soft. Spread 2 cups shredded Raley's Jack Cheese onto 4 Mission Flour Tortillas.
2. Top with 2 cups grilled, chopped R Everyday boneless, skinless chicken breasts, 1 cup diced fresh yellow peaches, equal amounts of grilled onions and minced jalapeño peppers to taste.
3. Top with 4 more tortillas and grill for about 5 minutes on each side or until cheese is melted.
