1 to 1 1/2 lb. pork tenderloin
1 cup Ocean Spray Whole Berry
Cranberry Sauce
1/4 cup Ficklin Port
Grated lemon zest (optional)
Directions
Prep Time: 2 minutes
Cook Time: 25 minutes
Melt butter in a large skillet. Press thyme onto the surface of the pork and place in skillet. Cook for 25 minutes over medium heat, turning occasionally, until internal temperature reaches 145°F. While pork is cooking, combine cranberry sauce and port in a small saucepan. Bring mixture to a boil; reduce heat and simmer for 5 minutes. Slice pork and top with cranberry sauce. Sprinkle with lemon zest, if desired.
