Ingredients
2 tbsp. butter
1-1/4 lb. boneless, skinless chicken
breasts, flattened slightly if very thick
1 (15-oz.) can pear slices packed in juice
or light syrup
3 tbsp. honey
3 tbsp. white balsamic vinegar
1 to 2 tbsp. chopped fresh basil
Directions
Prep time: 5 to 10 minutes,
Cook time: 15 minutes

Melt butter in a medium skillet. Add chicken
breasts; cook over medium-high heat for 5 minutes
per side or until chicken is golden brown and
cooked through to an internal temperature of 165°
F. Remove from skillet and keep warm. While
chicken is cooking, drain juice from pears,
reserving 1/4 cup; cut each pear slice in half
lengthwise. Add pears, juice, honey and vinegar
to skillet; cook for a few minutes over medium heat
to reduce sauce slightly. Return chicken to skillet
and cook for 1 minute more, turning chicken once
to coat with sauce. Sprinkle with basil.

Makes 4 servings.
