Ingredients
4 medium catfish fillets (about 1-1/4 lb.)
1/2 cup cornmeal
1/4 cup flour
1 tbsp. Creole seasoning
1 tsp. onion salt
1 egg, beaten
1/4 cup extra light olive oil
Directions
Prep time: 10 minutes
Cook time: 10 to 12 minutes

Rinse fish fillets and pat dry. Stir together cornmeal, flour, Creole seasoning and onion salt in a shallow dish or pie plate. Dip each fillet in egg, then roll in cornmeal mixture. Heat oil in a large skillet and cook fish for 5 to 6 minutes per side or until fish reaches an internal temperature of 150°F and flakes easily when tested with a fork. Serve with lemon wedges.

How about giving an alternative to ingredients like "Creole Seasoning"? Most likely I already have the makings for specialized ingredients without having to wait until I go into town and search out 'Creole Seasoning'. The same goes for 'taco seasoning': cumin, chili, etc.   Member: d.smith
