2 lb. Yukon Gold potatoes, cut
into 1-inch cubes
2/3 cup sliced salame strips
(about 1/4-inch)
1/3 cup Raley's Sliced Olives
1/3 cup sliced green onions
1/4 cup olive oil vinaigrette
1 (6.5-oz.) jar Cara Mia Marinated Artichoke
Hearts, chopped (do not drain)
Directions
Prep time: 20 minutes, Cook time: 10 minutes, Chill time: at least 1 hour
Steam potatoes for about 10 minutes or until tender when pierced. Transfer to a large bowl and let cool slightly. Stir in remaining ingredients and mix well. Cover and chill for at least 1 hour.
