Ingredients
1 tbsp. olive or rice bran oil
1 large onion, chopped
1 (28-oz.) can Muir Glen Organic Fire
Roasted Diced Tomatoes
1 (16-oz.) jar Green Mountain Gringo Salsa
(any variety)
1 (15-oz.) can each: pinto beans and black beans,
rinsed and drained
1 (12-oz.) package Yves The Good
Ground Veggie Original
1 (7-oz.) can diced green chiles
1 tbsp. chili powder
1 tsp. oregano leaves
1 tsp. ground cumin
1 cup chopped red, yellow or orange
bell pepper
Salt and freshly ground pepper to taste
Directions
Prep time: 15 minutes
Cook time: 40 minutes

Heat oil in a large pot. Add onion and sauté for 5 minutes.
Stir in all remaining ingredients except bell pepper, salt
and pepper. Bring to a boil; cover and simmer for 30
minutes. Add bell pepper and simmer for 5 minutes more.
Season to taste with salt and pepper.

Makes 8 servings.
