2 oz. thinly sliced pancetta (Italian bacon in our Deli), chopped
1 sheet puff pastry (1/2 of a 17.9 oz. box), thawed according to package directions
1¼ cups Raley's Shredded Italian Blend Cheese
1 large ripe Bartlett pear, cored and thinly sliced
1/2 tbsp. chopped fresh thyme

1. Preheat oven to 400°F and line a baking sheet with parchment paper. Cook pancetta in a small skillet for about 10 minutes or until very crisp, stirring frequently; drain on paper towels.
2. Unfold puff pastry and place on parchment; fold up 1/2-inch of pastry on all sides to form a rim. Top with cheese, pear and pancetta. Bake for 18 to 20 minutes or until pastry is puffed and top is golden brown. Let cool slightly, then top with thyme; cut into 16 squares.
