Directions
Prep time: 10 minutes, Cook time: 40 to 45 minutes
Heat oil in a large saucepan over medium-high heat until hot; add rice and cook, stirring constantly, until rice is golden. Place tomatoes, onion and garlic in a blender; puree until smooth and stir into rice with remaining ingredients. Bring to a boil; reduce heat and simmer, uncovered stirring occasionally for 30 to 35 minutes or until rice is done.
Makes 6 to 8 side dish servings.
