Green Beans with Sherry, Shallots and Bacon

Ingredients
1 (16-oz.) package Raley’s Steam-in-Bag
Extra
Fine Green Beans, thawed and drained
4 strips bacon
1 large shallot, peeled and thinly sliced
2/3 cup small julienne strips red bell pepper
1/4 cup dry sherry
1/4 tsp. salt
Freshly ground pepper to taste
Directions
Prep time 10 minutes, Cook time: 15 minutes

Cook green beans according to package directions. Meanwhile, cook bacon in a large skillet until crisp. Remove and drain on paper towels. Drain all but 1 tbsp. bacon grease from skillet. Add shallot; cook over medium heat for 5 minutes to soften. Stir in bell peppers, sherry, salt and pepper; cook for a few minutes more. Stir in hot beans and toss well to mix. Crumble bacon over the top.

Makes 6 servings.
