Heirloom tomatoes are perfect for this
dish, but any ripe tomato will do. Serve with
a crusty baguette and a green salad for the
perfect summer meal.
2 boneless, skinless chicken breasts
2½ tsp. Morton & Bassett Italian Seasoning
1/2 tsp. garlic salt
1/2 cup each: diced fresh tomatoes and fresh
mozzarella cheese
1 tbsp. balsamic vinegar
Snipped fresh basil to taste
Directions
Prep time: 10 minutes, Cook time: 13 to 15
minutes
Season chicken on both sides with Italian
seasoning and garlic salt; grill over medium heat
for 5 minutes on each side. Transfer chicken to a
piece of foil and top with tomatoes, cheese and
vinegar. Cook for 3 to 5 minutes more to melt
cheese, then sprinkle with snipped fresh basil.
Makes 2 servings.
