1 (10 to 14-lb.) fresh hen turkey
1/3 cup chopped fresh herbs (rosemary,
basil, marjoram, sage)
1/4 cup butter, softened
1 tbsp. minced garlic
1/2 tsp. pepper
Directions
Prep time: 15 minutes
Cook time: approx. 3 hours
Preheat oven to 325°F. Rinse turkey well and pat dry; place
breast side up on a rack in a large, shallow roasting pan.
Combine remaining ingredients in a small bowl; mix well.
Spread mixture over surface of turkey, rubbing some between
the skin and the meat. Insert an oven-safe meat thermometer
deep into the lower part of the thigh muscle, but not
touching the bone. Place in preheated oven. When turkey is
about two-thirds done, loosely cover the breast and top of
the drumsticks with a piece of foil to prevent overcooking
of the breast. Cook until thermometer reaches 180°F
(approximately 3 hours). Let stand for 5 to 10 minutes
before carving.
