5 Grain Salad with Turmeric Lime Vinaigrette

Prep: 20 minutes, Cook/Stand: 15 minutes, Chill: at least 1 hour  Serves: 8

2 cups vegetable stock
1 (8.8-oz.) package Raley’s 5 Grains (near the rice and pasta)
2/3 cup each: 1/4-inch diced red bell pepper and celery
1/2 cup minced red onion
1/2 cup golden raisins
3 tbsp. chopped fresh parsley
1/2 cup pistachio kernels, coarsely chopped

Dressing:
1/3 cup each: extra virgin olive oil and lime juice
2 tsp. ground turmeric
1 tsp. each: garlic salt and sugar

1. Bring stock and grains to a boil in a medium saucepan; reduce heat and simmer, covered, for 10 minutes. Remove from heat and let stand for 
5 minutes or until liquid is absorbed. Fluff with a fork and let cool.
2. Add bell pepper, celery, onions, raisins and parsley to grains. Whisk together all dressing ingredients in a small bowl and stir into salad. Cover and chill for at least 1 hour.
3. Sprinkle with pistachios just before serving.
