Caprese Skewers

Summer is almost here! When the thermostat rises, naturally you'll want something fresh and sometimes even a little lighter for your evening meal. We've got just the solution here at Raley's – quick and easy Fresh Caprese Skewers! Stacked with crisp bread (from our Bakery), Kumato Tomatoes, fresh basil and our delicious Raley's Mozzarella, it's just the meal to beat the heat. Drizzle it with our recipe for Balsamic Reduction Sauce, and you'll be hooked all summer long!
 

Caprese Skewers with Balsamic Reduction Sauce

Prep: 25 minutes, Cook: 15-20 minutes, Serves: 4 to 6
 

Ingredients:

1 cup Raley's Balsamic Vinegar

1/4 cup Raley's Honey

1 (11-oz.) loaf Raley's Crusty Sourdough Baguette

1 (16-oz.) ball Raley's Mozzarella Cheese

1 (16 oz.) package Kumato Tomatoes (in our Produce Dept.)

1 (2-oz.) package Full Circle Organic Basil Leaves

Raley's Olive Oil

Raley's Italian Seasoning Grinder

Raley's Black Pepper Grinder

Chef Style 4-inch Skewers (in our stores)
 

Directions:

1. Preheat oven to 400 degrees.

2. For the Balsamic Reduction, stir vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 15-20 minutes. Allow to cool as you prepare the skewers.

3. Slice bread about 1/2-inch thick and spread them out on a cookie sheet. Brush slices lightly with olive oil and season with Italian Seasoning. Bake in the oven for 4-5 minutes, or until lightly brown and toasted. Let cool, then cut into 4 quartered pieces.

4. Slice the mozzarella into 1/2-inch thick pieces, and cut those into 4 quartered pieces as well. Set aside.

5. Slice the tomatoes into 1/2-inch thick pieces. Sprinkle with sea salt and freshly ground black pepper. Cut each tomato into 4 quartered pieces.

6. To assemble, use 4-inch wooden skewers. Layer the appetizers: toast, mozzarella, tomato, and fresh basil leaf. Repeat and end with a third piece of toast. Drizzle with the Balsamic Reduction and serve immediately.
