In case you aren't able to whisk yourself away to the Island of Capri this summer, let your friends at Raley's, Bel Air and Nob Hill Foods bring it to you! 

You're probably familiar with Caprese Salad, which is fresh mozzarella, basil and tomato – absolutely refreshing and perfectly filling without overstuffing. "Caprese" refers to something that comes from or is in the style of Capri, an Italian island off the coast near Naples. We'd like to introduce you to a variation of the classic Caprese – our Caprese Corn Salad. Raley's Mozzarella Cheese, fresh corn kernels (we suggest Amaize Corn), snipped Full Circle Organic Basil and Spicy Nob Hill Trading Co. Olives to give it that extra kick of flavor – mixed with Raley's Italian Dressing and just a dash of Raley's Balsamic Vinegar. 

A chilled salad is just the thing to cool you off on a hot summer night, and here at Raley's, we have everything you need to create that perfect meal.

Caprese Corn Salad

Prep: 15 minutes, Chill: 1 hour, Serves: 6

1/2 cup Raley's Mozzarella Cheese

1 cup fresh corn kernels (approximately 3 ears)

1/2 cup Nob Hill Trading Co. Italian Spice Blend Olives

1/4 cup Full Circle Organic Basil, fresh snipped

1/4 cup Raley's Pre-Cut Onion

12 Full Circle Organic Grape Tomatoes, quartered

1/4 cup Raley's Italian Salad Dressing

1 Tbsp. Raley's Balsamic Vinegar

1.  Cut Raley's Mozzarella Cheese into very small cubes to equal 1/2 cup.

2.  In a medium bowl combine cheese, corn, olives, basil, red onion and grape tomatoes.

3.  In a smaller bowl whisk together 1/4 cup Raley's Italian Salad Dressing and 1 Tbsp. of Raley's Balsamic Vinegar.

4.  Drizzle over salad and toss to coat.

5.  Chill 1 hour and serve.
