Prep: 10 minutes, Serves: 1

Ingredients

1 (4.2- oz.) cup Full Circle Organic Ready To Eat Quinoa

2 tbsp. sliced ripe olives

2 tbsp. fresh corn kernels

2 tbsp. red bell pepper 1/4-inch diced

2 tbsp. salted pumpkin seeds roasted

2 tbsp. Newman's Own Light Lime Vinaigrette

1 small green onion sliced

1/4 ripe avocado cut into bite-size cubes

fresh cilantro

Directions

Stir together 1 (4.2-oz.) cup Full Circle Organic Ready To Eat Quinoa, 2 tbsp. each: sliced ripe olives and fresh corn kernels, 1/4-inch diced red bell pepper, roasted, salted pumpkin seeds and Newman’s Own Light Lime Vinaigrette and 1 small sliced green onion. Just before serving, cut 1/4 of a ripe avocado into bite-size cubes and stir in gently. Top with snipped fresh cilantro. Increase as desired, using 1/2 cup cooked quinoa for each serving.
