Mushroom Fajita Quesadillas
Mushroom Fajita Quesadillas
1 tbsp. vegetable oil
1/2 of a 12- oz. container Raleys Fresh Produce Fajita Vegetable Mix
2 cups mushrooms sliced
2 cups rotisserie chicken shredded
2 tsp. Morton & Bassett Mexican Seasoning
1 (8- oz.) package Mexican blend cheese shredded
4 burrito size flour tortillas
Prep time: 5 minutes, Cook time: about 15 minutes

Heat oil in a medium skillet over medium-high heat. Add
fajita mix and
mushrooms; cook for 5 minutes over medium-high heat,
stirring frequently. Stir in
chicken and seasoning. Place equal amounts of cheese and
fajita mixture on
half of each tortilla. Fold in half and cook in a large
skillet for about 3 to 5
minutes on each side or until tortilla is crisp and cheese
is melted.

Makes 4 servings.
