1. Preheat oven to 400°F and spray 24 mini muffin cups with nonstick cooking spray. Combine cornbread mix, egg, milk and thyme; stir just until combined.
2. Spoon batter into prepared pans and bake for 12 to 14 minutes or until golden brown on top. Slice muffins in half crosswise and top each with a dollop of cranberry sauce and a small piece of turkey.
