White Bean and Tomato Soup
Ingredients
2 cloves garlic minced
1 tbsp. olive oil
2 (15- oz.) can white beans
1 (14.5- oz.) can Italian style diced tomatoes
1 tsp. dried oregano leaves
Directions

Sauté 2 cloves minced garlic in 1 tbsp. olive oil over medium heat in a medium saucepan until fragrant. Add 1 (15-oz.) can white beans and mash coarsely. Stir in 1 additional can white beans, 1 (14.5-oz.) can Italian style diced tomatoes and 1 tsp. dried oregano leaves. Simmer, partially covered, for 10 minutes. Season to taste with salt and pepper. Top with shaved Parmesan cheese, if you like. Makes 4 servings.
