Saucy Taco Potatoes
1 lb ground beef
Chachie's Salsa
Raley's frozen (thawed) or canned corn
4-6 large russet potatoes
Raley's Pepper Jack Cheese
Raley's Sour Cream
Hass avocado
green onions sliced

Crumble 1 lb. ground beef into a medium skillet and cook until no
longer pink; drain excess fat. Stir in Chachie’s Salsa and Raley’s
frozen and thawed or canned corn to taste and cook until hot.
Microwave or bake 4 to 6 large russet potatoes until soft. Slit
open and fluff potato. Spoon beef mixture into potatoes and top
with shredded Raley’s Pepper Jack Cheese. Top with Raley’s Sour
Cream, diced Hass avocado and sliced green onions.
Makes 4 dinner servings.
