Apricot Lime Pork Chops
4 Raley's pork loin chops
Salt and pepper to taste
1 tbsp. butter
1/2 cup apricot jam
1/4 cup lime juice
1 tbsp. chopped fresh rosemary
Prep: 5 minutes, Cook: 20 to 25 minutes, Serves: 4
2. Melt butter in a large skillet. Cook pork over medium heat for 8 to 10 minutes per side or until pork reaches an internal temperature of 145°F.
3. Stir together jam and lime juice and pour into skillet. Cook for 5 minutes more or until pork is nicely glazed. Sprinkle with rosemary and serve with rice and steamed fresh vegetables.
