Barbecued Beef Brisket
Barbecued Beef Brisket
Ingredients
1 (4- lb.) beef brisket
Garlic salt, pepper and paprika
1 large onion peeled and sliced
1 1/2 cups prepared barbecue sauce
1 cup beer
Directions
Prep time: 5 minutes
Cook time: 2 1/2 hours

Place meat on grill over high heat to sear outside. Remove from grill
and
place in a 13-by-9-inch foil pan. Sprinkle with garlic salt, pepper and
paprika.
Place onion over meat; combine barbecue sauce and beer and pour
over
top. Seal with foil and place on covered grill over medium-low indirect
heat* for
2 1/2 hours, rotating several times to avoid hot spots. Remove from
pan and
slice thinly across the grain. Top with onions and sauce and serve.

Makes 8 servings.

*With indirect heat, the heat source is not directly under the meat, but
around
the edges. If using charcoal, make a ring of hot coals and place the
food on
a rack in the center. If using a gas grill, turn off the burner that is
directly
under the meat.
