Italian Meatloaf Burgers
2½ lbs. lean ground beef
1/2 cup seasoned bread crumbs
1/4 cup pesto, plus additional for toppings
1/4 cup smoked sun-dried tomatoes minced
1½ cups Rumiano Smoked Mozzarella Cheese (in our Deli) shredded
8 ciabatta rolls (or loaves of ciabatta bread halved lengthwise
Red onion slices (topper)
Prep: 15 minutes Cook: 10 to 15 minutes Serves: 8
Mix ground beef, bread crumbs, pesto, sun-dried tomatoes and eggs in a large bowl. Shape into 8 flat patties and cook on a well-oiled grill over medium-high heat for 5 minutes on each side, topping with cheese after turning.
Serve on lightly toasted ciabatta rolls (or loaves of ciabatta bread) with additional pesto, red onion slices and arugula.
