Cranberry Quinoa Salad
Cranberry Quinoa Salad
1 cup quinoa
1-1/3 cups water
1/2 cup red wine vinaigrette
1/3 cup dried cranberries (bulk bin #608)
1/3 cup walnuts (bulk bin #651), toasted
1/4 cup organic green onions, sliced
1 tbsp. grated orange zest

Prep: 15 minutes, Cook: 10 minutes, Chill: at least 1 hour, Serves: 4

1. Rinse quinoa well in a strainer until water runs clear.

2. Place in a small saucepan with water; bring to a boil. Reduce heat and simmer, covered, for 10 to 15 minutes or until all of the liquid has been absorbed.

3. Let cool, then toss with remaining ingredients. Cover and chill for at least 1 hour.
