Fragrant Citrus Tilapia
1 lb. tilapia fillets
1/3 cup freshly squeezed orange juice
2 tbsp. butter
1/2 tbsp. grated orange zest
1/2 tsp. tarragon
Salt and freshly ground pepper to taste

2. Combine juice, butter, zest and tarragon in a microwave-safe dish; cook on high for 1 minute or until butter is melted; pour over fish.
3. Season with salt and pepper and bake for 10 minutes or until fish reaches 150°F on a meat thermometer and flakes easily when tested with a fork. Serve with wild rice.
