Fragrant Citrus Tilapia
1 lb. tilapia fillets
1/3 cup orange juice freshly squeezed
2 tbsp. butter
1/2 tbsp. orange zest grated
1/2 tsp. tarragon
Salt and pepper to taste freshly ground

Prep time: 10 minutes, Cook time: 10 minutes
Preheat oven to 425°F. Rinse fish and pat dry; place in a 7-by-11-inch baking dish. Combine juice, butter, zest and tarragon in a microwave-safe dish; cook on high for 1 minute or until butter is melted; pour over fish. Season with salt and pepper and bake for 10 minutes or until fish reaches 150°F on a meat thermometer and flakes easily when tested with a fork. Serve with wild rice.
