Quick Salmon with Lemon Pesto Butter
4 salmon fillets
Salt and pepper to taste freshly ground
1/4 cup butter
1-1/2 tbsp. Classico Traditional Basil Pesto
1/2 tbsp. Sicilia Lemon Juice
1 tsp. lemon zest finely grated

Prep Time: 10 minutes Cook Time: 10 minutes

Rinse salmon and pat dry; season to taste with salt and pepper.
Place on a greased baking sheet and broil 3 to 4 inches from heat
until fish reaches 150F on a meat thermometer and flakes easily
when tested with a fork, about 10 minutes for 1-inch thick fillets.
Meanwhile, stir together remaining ingredients in a small bowl.
Place a spoonful over the top of each cooked fillet.

Makes 4 servings.
