Quick Salmon with Lemon Pesto Butter
Quick Salmon with Lemon Pesto Butter
4 salmon fillets
Salt and freshly ground pepper to taste
1/4 cup butter
1 tbsp. Raley's Pesto
1/2 tbsp. lemon juice
1 tsp. finely grated lemon zest

Prep: 10 minutes, Cook: 10 minutes, Serves: 4

1. Rinse salmon and pat dry; season to taste with salt and pepper. Place on a greased baking sheet and broil 3 to 4 inches from heat until fish reaches 150°F on a meat thermometer and flakes easily when tested with a fork, about 10 minutes for 1-inch thick fillets.

2. Meanwhile, stir together remaining ingredients in a small bowl. Place a spoonful over the top of each cooked fillet.
