Soyrizo Potato Tacos
1 lb. potatoes, cut into 1/2-inch cubes
3/4 cup Soyrizo Meatless Chorizo
1/2 cup pico de gallo or salsa
1/2 cup shredded Jack cheese
Prep: 10 minutes, Cook: 10 minutes, Serves: 4
2. Transfer to a large skillet with chorizo, pico de gallo and cheese. Cook over medium-high heat for 5 minutes, stirring frequently.
3. Spoon into warm tortillas and top with fresh cilantro.
