Fruit and Nut Roll Ups
Fruit and Nut Roll Ups
1 cup slivered almonds
1 cup Mediterranean apricots
1/3 cup powdered sugar
1 tsp. rose water*
1/2 tsp. ground cardamom
10 sheets phyllo dough
1/4 cup butter melted
Powdered sugar for dusting
Prep time: 45 minutes, Cook time: 20 minutes

Preheat oven to 350F and line two baking sheets with parchment paper. In a food processor, process almonds, apricots, sugar, rose water and cardamom until nuts and apricots are ground. Cut each sheet of phyllo dough into 4 rectangles. Work with four rectangles at a time, keeping remaining phyllo covered with a damp towel to keep from drying out. Brush dough squares lightly with melted butter and place a heaping teaspoon of filling in the center of each. Fold in sides and roll into a cigar shape. Place on prepared baking sheets and cook for 20 minutes or until golden brown. Let cool and dust with additional powdered sugar.
