Parmesan Truffle Potato Chips
2 large Yukon gold or russet potatoes (1 lb.)
6 tbsp. truffle oil, divided
1/4 cup grated Parmesan cheese, divided
Freshly ground sea salt and pepper to taste
Prep: 15 minutes, Cook: 20 to 25 minutes (per batch), Serves: 8
2. Place half the potatoes in a single layer on 2 large parchment-lined baking sheets and sprinkle with the Parmesan cheese and 1 tbsp. truffle oil; season lightly with salt and pepper.
3. Cook for 20 to 25 minutes, turning once or twice, removing any chips that are browned (some may cook faster than others). Repeat with remaining potatoes, cheese, salt, pepper and truffle oil. Re-crisp in a hot oven for a few minutes, if necessary.
