Greek Spiced Lemon Turkey Burgers
Greek Spiced Lemon Turkey Burgers
Ingredients
1/2 cup plain, fat-free Greek yogurt
3 tbsp. Meyer lemon juice, divided
1 tsp. minced fresh mint
2 tsp. finely grated Meyer lemon zest, divided
1 clove garlic, minced
Freshly ground sea salt to taste
Freshly ground pepper to taste
1 (20- oz.) package lean ground turkey
1/3 cup minced red onion
1/4 cup chopped, pitted kalamata olives
1/4 cup Raley's Reduced Fat Crumbled Feta Cheese
1 tsp. McCormick Gourmet Collection Greek Seasoning
3 wheat pita bread rounds, halved
1 cup Earthbound Farm Deep Green Blends Baby Kale OR
sliced romaine
1/2 cup diced tomato
Directions

Prep: 20 minutes, Cook: 10 minutes, Serves: 6  

1. Stir together yogurt, 1 tbsp. Meyer lemon juice, mint, 1/2 tsp. finely grated Meyer lemon zest, garlic, sea salt and pepper in a small bowl; cover and refrigerate until ready to serve (may be prepared 1 day ahead). 

2. Stir together turkey, onion, olives, cheese, remaining lemon juice, remaining lemon zest and Greek seasoning in a medium bowl and shape into 6 flat patties. Grill, broil or cook in a nonstick skillet for 5 minutes on each side or until cooked through. 

3. Place a handful of greens into each pita half. Place a burger and diced tomatoes in each and top with yogurt sauce.
