Chimichurri Chicken Tortilla Panini
1 cup shredded rotisserie chicken breast
3/4 cup shredded pepper Jack or Monterey Jack cheese
1/3 cup salsa verde
1/3 cup sliced ripe olives
2 tsp. Raley's Chimichurri Steak Seasoning
1/2 cup mashed avocado
6 Mission Wheat and Black Bean or Multigrain Tortillas
Olive oil cooking spray
Prep: 10 minutes, Cook: 5 to 10 minutes, Serves: 6
2. Spread equal amounts of avocado on half of each tortilla and top with equal amounts of chicken mixture; fold in half. Coat on both sides with cooking spray.
3. Cook for 5 minutes in a hot panini press or for 5 minutes on each side in a medium skillet.
