Warm Butternut Squash and Date Salad
Small Plates: Warm Butternut Squash and Date Salad
Ingredients
1 cup 1/2-inch cubes butternut squash
1 tbsp. extra virgin olive oil
1/4 cup chopped red onion
1/4 cup diced pitted dates
2 tbsp. red wine vinegar
1 tsp. honey
1 cup arugula
Directions

Prep: 15 minutes, Cook: 15 minutes, Serves: 2

Cook 1 cup 1/2-inch cubes butternut squash in 1 tbsp. extra virgin olive oil in a small skillet for 10 minutes, stirring frequently. Stir in 1/4 cup chopped red onion and cook for 5 minutes more or until both are soft. Stir in 1/4 cup diced pitted dates, 2 tbsp. red wine vinegar and 1 tsp. honey. Cook for a minute or two more to heat through. Place 1 cup arugula onto 2 plates and top with squash and date mixture.
