Mango, Quinoa and Black Bean Salad
Ingredients
2 (4.2- oz.) packages Full Circle Organic Precooked Quinoa
1 Large ripe mango, peeled, pitted and cut into 1/2-inch cubes
1 medium red bell pepper, diced
1 (15- oz.) can black beans, rinsed and drained
2 tbsp. Mezzetta Deli Sliced Tamed Jalapeņo Peppers
2 tbsp. juice from jalapeņo jar
2 tbsp. extra virgin olive oil
2 tbsp. chopped fresh cilantro
3/4 tsp. garlic salt
3 green onions, sliced
Directions

Prep: 20 minutes, Chill: 10 minutes, Serves: 4

Stir together all ingredients in a large bowl. Cover and let chill for 10 minutes.
