Quinoa Salad with Beets and Bacon
Quinoa Salad with Beets and Bacon
Ingredients
1 (4.2- oz.) package Organic Precooked Quinoa
1/4 cup small cubes Love Beets (any variety, in our Produce Dept.)
2 tbsp. coarsely chopped walnuts, toasted
2 tbsp. balsamic vinaigrette
1 strip crisp bacon, crumbled
1 green onion, sliced
1 tbsp. dried cranberries (optional)
Directions

Just big enough for a light lunch or dinner. Love Beets are precooked and soft enough to cut with a butter knife, so even the smallest cooks can help prepare this salad. 

Prep: 10 minutes, Serves: 1

Place quinoa in a medium bowl. Stir in Love Beets, walnuts, balsamic vinaigrette, bacon and green onion. Add dried cranberries, if you like. Recipe may be doubled.
