Hearts of Palm Salad with Ginger Orange Vinaigrette
Ingredients
Dressing:
1/4 cup extra virgin olive oil
1-1/2 tbsp. lemon juice
1-1/2 tbsp. orange juice
2 tsp. honey
2 tsp. finely grated fresh ginger
1/4 tsp. salt
Zest of 1 orange
Freshly ground pepper to taste

Salad:
2 oranges, peel cut away and cut into bite-size pieces
1 (14- oz.) can hearts of palm, drained and sliced
1 cup fresh watercress leaves
1 (6- oz.) bag Fresh Express 5-Lettuce Mix
1/2 cup coarsely chopped roasted, salted cashews
Directions

Prep: 15 minutes, Serves: 6

1. Whisk together all dressing ingredients in a large bowl. Add oranges and hearts of palm and toss to coat.

2. Add greens to bowl and toss again. Sprinkle with cashews and serve immediately.
