Sweet Marinated Italian Peppers
2 (10-oz.) packages Melissa?s Sweet Red Kapia Peppers
1 tbsp. extra virgin olive oil
1½ tsp. chopped fresh mint
2 cloves garlic, minced
Freshly ground sea salt and pepper to taste
Serve these pretty peppers on crusty baguette slices, in sandwiches or in a pasta salad.
2. Remove skins, stems and seeds and cut peppers into 1/2-inch strips. Place in a large bowl with remaining ingredients. Cover and refrigerate for at least 2 hours or up to 1 week.
