Grilled Pork with Tomato Marmalade
Ingredients
3 Roma tomatoes, peeled, seeded and diced
1/2 cup orange marmalade
1/8 tsp. red pepper flakes
4 Raley's boneless pork loin chops
Salt and pepper
Snipped fresh basil and grated lemon or lime zest
Directions

Prep: 15 minutes, Cook: 40 minutes, Serves: 4

1. Place tomatoes in a small saucepan with marmalade and red pepper flakes and bring to a boil. Reduce heat slightly and cook for 15 minutes, stirring frequently.

2. Season pork chops with salt and pepper and grill over medium heat for 8 to 12 minutes on each side or until cooked through.

3. Pour tomato mixture over pork and sprinkle with snipped fresh basil and grated lemon or lime zest, if you like.
