Grilled Pork with Tomato Marmalade
Ingredients
3 Roma tomatoes
1/2 cups orange marmalade
1/8 tsp. red pepper flakes
4 Raley?s boneless pork loin chops
salt and pepper
snipped fresh basil and grated lemon or lime zest
Directions

Prep: 15 minutes  Cook: 40 minutes  Serves: 4

Peel, seed and dice 3 Roma tomatoes. Place in a small saucepan with 1/2 cup orange marmalade and 1/8 tsp. red pepper flakes and bring to a boil. Reduce heat slightly and cook for 15 minutes, stirring frequently. Season 4 Raley’s boneless pork loin chops with salt and pepper and grill over medium heat for 8 to 12 minutes on each side or until cooked through. Pour tomato mixture over pork and sprinkle with snipped fresh basil and grated lemon or lime zest, if you like.
