Pear and Pancetta Crostini
Pear and Pancetta Crostini
1 (3- oz.) package diced pancetta (in our Deli)
1 firm but ripe Bartlett pear, cored and cut into bite-size slices
2 tsp. balsamic vinegar
2 tsp. honey
3 to 4 oz. soft goat cheese
12 (1/4 -inch thick) slices Nob Hill Trading Co. Sweet French Baguette (in our Bakery), lightly toasted
Fresh thyme leaves or snipped fresh basil (optional)

Prep: 15 minutes, Cook: 10 minutes, Makes: 12 appetizers

1. Heat a large skillet over medium-high heat. Add pancetta and cook for 5 minutes or until slightly crisp. Add pear and cook for 3 to 4 minutes. Stir in balsamic vinegar and honey and cook for 1 minute more.

2. Spread equal amounts of cheese on bread slices. Top with warm pancetta mixture and garnish with thyme leaves or basil, if you like. Recipe may be doubled.
