Savory Grain Fritters
Ingredients
2 (8.5- oz.) packages Seeds of Change Tigris A mixture of Seven Whole Grains
1 cup shredded Rumiano Smoked Mozzarella Cheese (in our Deli)
1/2 cup minced green onion
1/2 cup finely grated carrots
1/2 cup sliced almonds, toasted and chopped
1 tsp. herbes de Provence
1/2 tsp. garlic salt
3 beaten eggs, divided
1/2 cup flour
1 cups panko breadcrumbs
Vegetable oil for frying
Grated Parmesan cheese
Marinara sauce
Directions

Prep: 20 minutes, Cook: about 5 minutes, Makes: 24 appetizers

1. Microwave grains according to package directions. Stir together grains, cheese, vegetables, almonds, herbs, garlic salt and 1egg in a medium bowl. Using wet hands, press firmly into twenty four 1½-inch discs.

2. Dip each fritter in flour, then in remainingeggs, then in bread crumbs; let stand for 10 minutes.

3. Heat 1 inch of oil in a large saucepan until very hot. Fry fritters for a minute or two on each side or until golden brown. Remove and drain on paper towels.

4. Dust with Parmesan and serve with marinara sauce.
