Gluten-Free Buttermilk Cornbread
Ingredients
6 tbsp. melted unsalted butter, divided
2 cups cornmeal
6 tbsp. granulated sugar
2 tbsp. masa harina (corn flour)
2 tsp. baking powder
1 tsp. baking soda
1 tsp. kosher salt
1 cup buttermilk
1 cup sour cream
1 egg
Directions

Prep: 15 minutes, Cook: about 30 minutes, Serves: 8

1. Preheat oven to 350°F and brush 2 tbsp.butter in an 11 X 7-inch baking dish.

2. Stir together dry ingredients in a medium bowl. Whisk together buttermilk, sour cream, egg and remaining butter in a large bowl; stir in dry ingredients.

3. Spread into prepared baking dish and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
