Vegetarian Ramen Noodle Soup with Soft Egg
Vegetarian Ramen Noodle Soup with Soft Egg
Ingredients
Broth:
2 tbsp. vegetable oil
6 cloves garlic, roughly chopped
5 shallots, chopped
2 yellow onions, roughly chopped
3 carrots, peeled and roughly chopped
1 (2- inch) piece ginger, peeled and cut into thin matchsticks
1 bunch cilantro, roughly chopped and divided
4 cups small mushrooms, cleaned and halved
8 cups water
3 tbsp. soy sauce
2 tsp. white miso paste
1 tsp. sesame oil
1 serrano chili pepper, sliced

Soup:
6 eggs
2 cups sliced shiitake mushrooms
8 oz. udon noodles
3 green onions, thinly sliced
8 oz. firm tofu, drained and cut into 1-inch cubes
1 (1- inch) piece ginger, peeled and cut into thin matchsticks
3 cups baby spinach leaves
1 serrano chili pepper, thinly sliced (optional)
Directions

Prep: 15 minutes, Cook: about 1 hour, 30 minutes, Serves: 6 to 8

1. Heat oil in a large pan. Add garlic, shallots and onions; cook for 5 minutes or until mixture is soft and golden brown. Add carrots, ginger, 1/2 bunch cilantro and mushrooms; cook for 10 minutes more. Add water, soy sauce, miso paste, sesame oil and serrano pepper and bring to a boil. Reduce heat and simmer for 1 hour.

2. Strain broth through a fine sieve and discard the solids. Return to pan and simmer for 8 more minutes.

3. Meanwhile, bring water to a boil in a large saucepan and gently add eggs to soft boil. Cook for 5 minutes, then remove from pot. Do not drain pot. Place eggs under cold water and peel; set aside for garnish.

4. Cook noodles per package directions in same pot; drain and set aside.

5. Heat sesame oil in a large skillet; add shiitake mushrooms and cook for 8 to 10 minutes or until golden brown.

6. Divide noodles, shiitake mushrooms, tofu, ginger, remaining cilantro, baby spinach, serrano chili (if you like), broth, green onions and soft boiled eggs between bowls and serve.
