Kare-Kare (Oxtail Stew with Eggplant, Baby Bok Choy and Peanut Butter)
Ingredients
2 lbs. oxtail (in our Meat Dept.)
Raley's Salt and pepper to taste
3 tbsp. Raley's Vegetable Oil
4 cloves garlic, thinly sliced
2 large onions, cubed
3 cups chicken stock
Juice of 1 lime
1/2 lb. baby bok choy
1/2 lb. fresh green beans, cut into 1-inch pieces
1 small eggplant, cubed
1/4 cup creamy peanut butter
1/4 cup chopped fresh cilantro
1 jalapeno pepper, sliced

Directions

Prep: 20 minutes, Cook: 2 hours, Serves: 4

1. Season oxtail with salt and pepper. Heat oil in a large dutch oven; add oxtail and brown on each side. Add garlic and onion, then cook for 5 minutes. Add stock and lime juice; reduce heat to low and cook for 1½ hours.

2. Add green beans, bok choy and eggplant; stir well to mix. Add peanut butter and cook for 10 minutes more. Garnish with cilantro and jalapeño and serve with rice.
