Pickled Veggie and Gouda Stuffed Turkey Burgers
Pickled Veggie and Gouda Stuffed Turkey Burgers
Ingredients
4 Jennie-O Original Turkey Burgers (1/3 pound)
1/4 cup Mezzetta Giardiniera Italian Mix, finely chopped
2 tbsp. spicy brown mustard (we like Sierra Nevada)
3 slices Gouda cheese, torn into 1/2-inch pieces
1 cup panko breadcrumbs
1/2 tsp. garlic salt
1/2 tsp. dried dill
2 tbsp. canola or olive oil
4 slices Nob Hill Trading Co. Whole Grain European Loaf (in our Bakery), toasted
4 cups baby arugula
1 cup cherry or grape tomatoes, sliced
Directions

Lightly dress greens in a small amount of olive oil and balsamic vinegar for extra flavor.

Prep: 15 minutes Cook: 15 minutes Serves: 4

1. Place turkey burgers on a flat surface. Place pickled vegetables, mustard and cheese on one side of each. Carefully fold over the other side to enclose filling. Pick up and pinch edges to seal, Shape into a circle, pressing turkey back together if filling starts to poke through.
2. Stir together breadcrumbs and seasonings in a shallow dish. Carefully place each burger in mixture, pressing to coat heavily.
3. Cook in oil in a very large nonstick skillet over medium heat for 5 to 7 minutes on each side or until cooked through and golden brown.
4. Place bread, greens and tomatoes on 4 plates and top each with a burger.
