Crunch Topped Maple Walnut Yams
Ingredients
3 lbs. yams, sliced 1/4-inch thick
3 tbsp. pure maple syrup
3 tbsp. better-for-you spread or Sunnyside Farms Butter
1 cup coarsely crushed Barbara?s Multigrain Squarefuls Maple Brown Sugar cereal
1/4 cup coarsely chopped walnuts
1 tbsp. ground flaxseed
1 tsp. cinnamon
1/2 tsp. ground cardamom
Directions

Prep: 15 minutes Cook: 15 minutes Serves: 6

1. Layer yams into an 8-inch buttered baking dish. Cover and microwave on HIGH for 10 minutes or until yams are tender when pierced with a fork; drizzle with  2 tbsp. pure maple syrup.
2. Melt better-for-you spread or Sunnyside Farms Butter in a medium skillet.
3. Add Barbara’s Multigrain Squarefuls Maple Brown Sugar cereal, chopped walnuts, ground flaxseed, cinnamon and ground cardamom; cook until toasted and fragrant.
4. Stir in remaining pure maple syrup and cook for 1 minute more; spoon over yams.
